For the toast
- 1 slice of bread of your choosing
- 1/2 ripe avocado
- Pinch of salt
- Egg, if desired
- Tomato, if desired
- Toast your slice of bread until golden and firm.
- Remove the pit from your avocado. Put it into a bowl and smash it up with a fork until it's smooth. Mix in a pinch of salt.
- Spread avocado on top of your toast. Enjoy as-is or top with poached egg and grilled tomato.
When poaching your eggs, the trick is to use water that's barely simmering -- the less the water is bubbling the less of a chance it will break up your egg.
